I've been running alone quite a bit lately and even if I listen to the funnest, loudest, rockiest, pump- upiest music ever I get bored and want to walk so bad it kills me to keep running. THEN I started listening to episodes of This American Life instead of music and I now I can run as far as I want without getting bored. I always thought I needed music to pump me up while I run but it turns out I just need a good distraction. It's like a miracle drug. And speaking of drugs, this week's ep called "Tough Love" about a drug court in Georgia is SO good.

I've said it before. I'll say it again... I'M A UTAH FAN. But I couldn't help cheer for James Fredette and The Cougs last night. It was pretty sad they couldn't pull it off. Although I am happy we didn't splurge on $900 flights to the game and at least we had good game day food while we watched. I'm an expert in seeing the positive in everything! What else can I say?

Made a quick trip to Vegas last weekend with these lovelies (plus two more). The weather wasn't quite what we expected but we made up for it with food, shopping, and dancing to 80's cover bands. Vegas is becoming the only way to get through the winter around here.

For the big night I made the easiest pie ever and it turned out pretty yummy.
1. Make choco instant pudding
2. Mix whipped cream in w the pudding
3. Put mixture in a pre-made crust
4. Refrigerate for an hour or more
5. Cover the top with more whipped cream when you're ready to serve

I had to take Ron to the airport early, early today. After the crazy amount of snow we got last night (I missed The Women Tell All because of the stupid snow) I wanted to take the Xterra, but it was snowed in (it doesn't make sense, I know) so we were cruising along in a big fatty car. After some careful driving (hmm.. playing each other in hearts on our phones) we made it to airport. When Ron got out of the car he reminded me to drive slow since that car doesn't do so hot in the snow. So I was cruising along I80 and I hit a patch of snow and started to spin. I barely missed the two cars next to me and continued to do a 360 across the entire freeway. When I finally stopped spinning I was perpendicular to the road and my drivers side was facing the on-coming traffic that had slammed on their brakes to avoid hitting me. While I was spinning i knew i was going to die and there was nothing i could do about it. It reminded me of the Vegas Bowl when i was in the tunnel when the jets flew over and i thought a bomb went off in the stadium. I knew i was going to die right then, but somehow i made it out of that one alive too. I guess I'm a pretty lucky girl.
It is a blizzard today and I wasn't working so I decided to try this recipe Tia gave me for soup. It's super yummy and pretty easy.
Chicken and Wild rice Soup
2 boxes Uncle Ben's long grain wild rice (quick cook method)
1 C. flour
1 C. butter
1 Chopped onion
2 grated carrots
6 C. water
2 C. half and half
3 chicken bouillon cubes
5 C. cooked chicken
Prepare rice according to directiosn. let this stand while preparing the rest of the soup. Brown butter, onion, and carrots until onion and carrots are soft. Beat flour and water together so flour is dissolved and nto chunky. Add to onion and carrots. Add half and half, bouillon cubes and cooked chicken. Add prepared rice mix and warm in a crock pot. Serves 10.

We did a mid-week trip to Vegas last week. Are sensing a trend? I think I've been there every month since moving back. But Vegas really is the perfect way to get through the winter. This trip it was the perfect no-temp temperature. We were out at the pool the whole time and never got hot or cold... Perfection. We also hit up "Love" which I have been dying to see for years... Um, I basically loved it. Ha. AND there is a Dos Caminos in Vegas now so we felt like we were back in NY enjoying some fresh guac... Heaven! And then to top it all off... We made it back for skiing on Saturday! Holla!!
